- 1 jicama
- 1 red pepper
- 1/2 red onion
- 1 lime
- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/8 tsp cayenne pepper
Peel and shred jicama. Thinly slice red pepper and red onion. Mix together. Drizzle with oil, squeeze lime, and sprinkle spices. Mix well. (Add any other veggies you like.) Ready to eat, or cover and refrigerate.
