Stuffed Sweet Potato

Simply sweet and filling. A perfect lunch!

I always keep some baked sweet potatoes* on hand (see my sweet potato hummus recipe to find out why!) Simply reheat, top with some cottage cheese (low fat or non-fat, your choice), sprinkle with nuts (toasted** or untoasted, your choice), and craisins. Packed with the perfect mix of protein, carbs, and fat. Filling and delicious!

*to bake sweet potatoes, clean with a brush under running water, cut off any bruises or stems, prick all over with a fork, place in a ceramic or glass baking dish with a bit of water and bake 90 minutes at 400. Do a few at once; they’re good to have on hand.

**to toast nuts, simply put them in a small pan on medium heat and stir them often for a few minutes until they smell nutty, don’t let them burn. Also good to keep extras on hand.

Proper Neck Alignment

Simple ways to align your neck and back. Prevent injury and tension.

Amazing Vegan Chili

  • 2 large cans of kidney beans, any kind
  • 3 bay leaves
  • 28 oz can diced tomatoes
  • 16 oz frozen, chopped okra
  • 6 oz tomato paste
  • 2 Tbsp soy sauce
  • 3 onions, chopped
  • 4 carrots, diced
  • 3 celery stalks, chopped
  • 1/2 butternut squash, peeled and chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 4 garlic cloves, minced
  • 1 tsp crushed red pepper
  • 2 tsp dried sage
  • 1 Tbsp chili powder
  • 1 Tbsp salt
  • 1 cup cilantro, minced

Rinse and drain beans. Place in crockpot on high heat. Add bay leaves, chopped tomatoes with juice, okra, tomato paste, and soy sauce. (If you are feeling lazy, skip the rest of the recipe and just add everything else, cover and cook in the crockpot for 1 hour on high or 3 hours on low.)

Heat oil and sauté onions and carrots 5 minutes until softened. Add remaining vegetables and spices (hold cilantro until end) and sauté another 5 minutes. Add to crockpot, cover and cook for 1 hour on high or 3 hours on low. Add cilantro before serving. Great with a warm loaf of fresh bread!

Pickled Cabbage

The perfect sweet and tangy condiment!

  • 1/3 – 1/2 head red or green cabbage
  • 1.5 cups apple cider vinegar
  • 1 cup water
  • 2 Tbsp sugar
  • 2 garlic cloves, bruised
  • 2 bay leaves
  • 1 tsp kosher salt
  • 1/8 tsp mustard seeds

Finely shred cabbage and pack into 1 quart glass jar. Combine all other ingredients in saucepan and boil 10 minutes. Pour over cabbage, push down garlic and leaves, and let sit on counter about 4 hours. When completely cool, cover tightly and refrigerate.

  1. Stay away from fats that are solid at room temperature: meat fats, cheeses, and solid oils.
  2. Load up on fiber: fruits, vegetables, grains.
  3. Exercise to the point of sweating – often!
