Baked Plantains
A Caribbean Favorite
- 2 ripe plantains
- 1/2 Tbsp oil
- 1 Tbsp honey or agave
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- pinch salt
Slice plantains on diagonal, 1/2″ thick. Toss with all ingredients. Spread out on baking sheet. Bake at 350 for 20 minutes or until golden brown. (Flipping at the halfway point is helpful but not necessary). A great carbohydrate, filled with flavor and nutrients!

Trees endure all weather and often use the changes to nurture their various needs.

Thai Peanut Noodles

Tasty, versatile, and good for you too!
- 1 box spaghetti or other noodles, broken in half
- 1 large head broccoli, chopped bite-size
- 1 red pepper, sliced thinly and chopped
- 1-2 bunches scallions, chopped fine
- 2 cups roasted unsalted peanuts
- 2 small cloves garlic
- 2 Tbsp soy sauce
- 4 tsp sesame oil (plus extra for noodles)
- 1/4 cup brown sugar
- 1/4 cup fish sauce (optional for vegan)
- 2 tsp tamarind paste
- 4 tsp sriracha or hot chili sauce
- 2 limes, juiced
- 2/3 cup water
- 1 can lite coconut milk
- 1 brick broiled tofu, diced (optional) Recipe at https://youtu.be/5bBv3u7gjrk
Cook noodles according to directions. When 3 minutes are left in cooking time, add broccoli. Drain all and rinse with cool water. Sprinkle with sesame oil. Mix in red pepper and scallions. In blender, combine all sauce ingredients and run at least 5 minutes on high, scraping sides often. Adjust water if needed. Add desired amount of sauce to noodles. Save leftovers for dipping or marinating. (Or make the spring rolls shown below.) So yummy!
