Kale & Chickpea Salad

with Roasted Garlic Tahini Dressing
  • 1 bunch kale, trimmed and rinsed, and spun dry
  • 1 large can chickpeas (28-30 oz) rinsed and drained
  • 6 Tbsp garam masala
  • 3 Tbsp olive oil
  • 2 heads garlic
  • 2 tsp olive oil
  • 1/2 cup sesame tahini paste
  • 2 Tbsp olive oil
  • 1/4 cup maple syrup (or honey)
  • 3/4 cup lemon juice
  • water, salt, pepper

Heat oven to 375F. Mix chickpeas with garam masala and oil. Cut top off garlic heads to expose cloves. Brush each with 1 tsp oil and wrap in foil, twisting top together loosely. Set garlic and chickpeas on tray and bake 15 minutes. Stir chickpeas and bake another 15 minutes. Remove chickpeas but bake garlic another 15 minutes (total 45 min).

Meanwhile, toss kale with a bit of lemon juice and olive oil. Prepare dressing by putting remaining ingredients in blender. Process until smooth and then add water, salt and pepper to achieve desired texture and taste.

Assemble salad, adding shredded carrots, red peppers, or other desired vegetables. Top with chickpeas and dressing.

Veggie Mexican Lasagna

  • 1 Tbsp oil
  • 1 tsp cumin seed
  • 1 onion, chopped
  • 3-4 garlic cloves, minced
  • 1-2 Tbsp minced hot pepper (any kind)
  • 1 zucchini, chopped
  • 1-2 yellow squash, chopped
  • 1-2 cups shredded cabbage
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 c minced sundried tomatoes
  • 1 c corn (frozen is fine)
  • 8 oz tomato sauce
  • 6 oz tomato paste
  • 1/2 c chopped cilantro
  • 16 oz refried beans
  • 15 oz kidney beans
  • 30 oz black beans
  • 1 pkg large, soft tortillas
  • shredded cheese (optional)

All vegetables and spices are optional – use what you like!

Heat oil. Add cumin seeds and darken slightly. When dark, add onion. When soft, add garlic, pepper, and squashes. Mix well, then add cabbage. When softened, add spices and mix well. Stir in sundried tomatoes and corn. Add tomato sauce, tomato paste, and cilantro and mix thoroughly. Mix in refried beans. Rinse, drain and add kidney beans and black beans. Make sure entire mixture is thoroughly combined. Spray a lasagne pan with oil. Lay tortillas across bottom. Spread bean mix, then cheese (if desired). Repeat layers. Cover loosely with foil and bake at 350 for 30 minutes. Remove and let rest for 15 minutes before cutting. Enjoy!

Acai Bites

Frosty Summer Treat

  • 32 oz Greek Yogurt, plain
  • 6 oz fresh raspberries
  • 8 oz fresh blueberries
  • 1/4 cup chia seeds
  • 1/4 cup honey
  • 1/4 cup chopped nuts

Line cookie sheet with wax paper. Spread yogurt over entire sheet and smooth to an even height. Blend berries, honey, and chia seeds. Swirl with nuts. Sprinkle evenly on top of yogurt. Freeze overnight. Crack into chunks and serve frozen. Stores well in freezer, so keep on hand for a quick, frosty, healthy snack!
